How to make Cauliflower Cheddar Bisque:


Saute onion and celery in olive oil over medium flame until tender.

Add chicken stock or water with bouillon cubes.

Add cauliflower, salt, pepper, and mustard and bring to a boil.

Reduce heat and simmer until cauliflower is tender.

Using a slotted spoon, remove half of the vegetables and set aside.

Add the milk and blend the soup.

Bring the soup to a boil for a minutes.

Season with salt and pepper.

Combine vegetables with creamed soup and garnish with parsley and shredded cheddar cheese.

Ingredients for Cauliflower Cheddar Bisque:

for 6 persons:



- 1 head of broken into small florets cauliflower

- 1 stalk celery, diced

- 1 onion, diced

- 2 tsp Dijon mustard

- 4 oz - 110g cheddar cheese

- 2 cups - 0,5l water with 2 vegetable bouillon cubes or chicken stock

- 2 cups - 0,5l milk

- 2 tablespoons olive oil

- Optional: parsley to garnish
