How to make Fritters:
In a bowl combine the lukewarm milk, yeast, vanilla sugar and yolks.
Using a wooden spoon, stir, gradually drawing in the sifted flour, until you have a smooth paste.
If the batter is too thick, you can add a splash of milk.
Beat the egg whites with a pinch of salt until stiff.
Fold the meringue into the batter.
Cover the bowl with a clean kitchen towel and let the batter rise in a warm spot for about about 40 minutes.
Heat the oil to 375 degrees F. In a pot suitable for deep-frying, drop large spoonfuls, the size of a walnut, of batter into the hot oil.
Cook the fritters for a few minutes until they are golden brown.
Sprinkle the fritters generously with confectioners' sugar and serve at once.

- 2 eggs
- 8g - 3 tbsp Dried yeast
- 2,4dl - 1 cup milk
- 10 g - 2 tbsp vanilla sugar
- 220gr - 8 oz flour, plus
- 1 tsp salt
