Garbanzos con Chorizo
Delicious and healthy Garbanzos con Chorizo recipe
Ingredients for Garbanzos con Chorizo:
For 6 persons:
- 32 oz - 900 gr canned chick peas
- 1 chorizo, sliced in 1″ - 2cm pieces
- 4 cups water
- 3 Tbsp. canola oil
- 1 small green bell pepper, chopped
- 1 small Spanish onion, chopped
- 3 garlic cloves, chopped
- 1 tsp. oregano
- 1 tsp. cumin
- 1 bay leaf
- 2 tsp. olive oil
- Salt and ground black pepper
How to make Garbanzos con Chorizo:
Add 4 cups of water, chick peas, salt and bay leaf to medium pot. Cover and cook on medium/high heat for about 10 minutes.
While garbanzos are cooking, make sofrito with the canola oil, using all vegetables and all seasonings.
Add sofrito and chorizo to chickpeas. Stir well.
Cover and cook for another 10-15 minutes on medium-high. Uncover and add olive oil. Stir. Let simmer for 5 minutes.
Serve at room temperature with some nice chunky bread.
