Parsnip and Broccoli Soup

Delicious and healthy Parsnip and Broccoli Soup recipe

  

Ingredients for Parsnip and Broccoli Soup:

For 6 persons:


- 2 large parsnips (peeled and diced)
- 400g broccoli (cut into small florets)
- 3 cloves garlic (finely chopped)
- 1 onion, chopped
- 1 liter of water
- 2 vegetable stock cubes
- pepper and salt
- olive oil





How to make Parsnip and Broccoli Soup:

 


Put some olive oil in a soup pot and fry the onion and the chopped garlic cloves over low heat.
Add the sliced parsnip and broccoli florets and pour the water with the vegetable stock cubes over.
Bring to the boil and cook 25 minutes.
Mix the soup and season with salt and pepper.
