 (Spanish Potato Soup)

  

How to make Patatas Riojanas:

 

Pour olive oil into a large frying pan.

Sauté the chopped onion and chorizo until onions are translucent, then add garlic slices for 1 minute.

Remove pan from heat.

Add stock and white wine.

Add the potatoes and paprika and stir.

Heat to a boil, then reduce heat and simmer on low until potatoes are cooked.

Season with salt and pepper.

Ingredients for Patatas Riojanas:

For 6 persons:


- 2 lb - 900g potatoes, cut into 1 to 1 1/2 inch (2 to 3 cm) chunks.

- 2 ½ lb - 225g chorizo sausages, cut into 1-inch (2,5cm) pieces

- 1 large onion, chopped

- 2 cloves garlic, sliced

- 4 tbp olive oil

- 2 cups -460ml chicken stock

- 3/4 cup - 178 ml white wine

- 1 tbp spanish paprika
