Tomato-Coconut Soup

Delicious and healthy Tomato-Coconut Soup

  

Ingredients for Tomato-Coconut Soup:

for 6 persons:


- 4 cups - 1l  tomato vegetable Juice

- 1¼ cups - 300 ml. coconut milk

- 1 cup - 90gr of dried shredded coconut

- 2 cloves garlic

- 3 tbsp dried parsley

- 1 tbsp garam masala

- ½ tsp ginger

- ½ tsp cayenne pepper

- 1 bay leaf


How to make Tomato-Coconut Soup :


Mix all the ingredients in a large pot.
Bring the mixture to a soft boil.
Let simmer 15–25 minutes.

Take out  the bay leaf and blend the soup with an hand blender.

Ladle soup into bowls and garnish with shredded coconut.
