"This sopa de ajo (or Spanish garlic soup) is very simple, but very tasty. With only a few ingredients, this divine soup will be on the table within half an hour."
For 6 persons:
- 6 full bulbs garlic (peeled and sliced)
- 6 eggs
- 2 tablespoons OXO
- 2 liters of beef stock or water with 2 beef bouillon cubes
- olive oil
- pepper and salt
- 3 tbsp fresh parsley
- salt and ground black pepper to taste
How to make Spanish Garlic Soup:
Heat some olive oil a large soup pot and saute the garlic.
Add beef stock or water with 2 beef bouillon cubes and OXO and bring to the boil.
Reduce heat and simmer for 15 min.
Season with salt and pepper.
Insert a small ladle into the boiling soup and add the eggs one by one.
Let it cook until the eggs are ready.
Ladle the soup and garnish with chopped parsley and toasted French bread.
